The juice was settled for clarity and then cool fermented to retain the fruits intense varietal characters. The wine was aged briefly on yeast lees before bottling to enhance palate texture and complexity.
Fruit for this wine was sourced from the Awatere and Waihopai valleys where the vines are planted on a variety of soil types ranging from free draining gravelly soils to silty clay. Low yielding vines and typical warm days and cool nights have resulted in a wine showing fresh classic flavours with purity and intensity.
